Why would you put Lay of the Land in mono green deck? Why not just put another forest in?

Extra mana-find, and pulls more of the land out of the deck. It's not uncommon for me to get around 12-18 lands out in a game. Means I have a stronger chance of pulling something other than mana. And with how much creatures cost, if I have no mana in my hand that turn, play and get another mana out.
But now that I've added some extra cards, that is one more card that will be getting removed
