Fireboar & Tunneler
If I target Valakut Fireboar with Goblin Tunneler's effect then announce my Attack Phase and declare Valacut Fireboar as an attacker will it be unblockable even though its power and toughness switches?

Yes, because spells and abilities only check for target legality when they are cast/activated and when they resolve.
Once the Tunneler's ability has resolved, the Fireboar is unblockable until end of turn. <-period
