Question on redirect spells

Simple: can you use instants such as redirect to counter a spell and choose to have no target? For instance, if I used redirect on a path to exile and my opponent had no creatures to exile, would I have to choose one of my creatures to be exiled?

Also, can these instants only be used on spells that describe choosing a target? Could I use redirect on a cultivate to search my deck for lands?

If I'm not mistaken you can play redirect targetting any type of spell. Redirect says that you may change targets of target spell.

- In case of redirect Path to Exile: You must choose a legal target for path to exile, if you are the only one with a creature you must target your own creature.

- In case of Cultivate: cultivate has no target and redirect has no effect (but it's legal to play it targetting cultivate)

So would the result be me getting to cultivate when you play it? If so, I hate that card... Cultivate is part of my main deck :)

A target is when a card explicitly has "target" in it's wording. Words such as "you" or "your opponents" are not targets, while "target player" or "target opponent" are targets.

Redirect allows you to alter targets, but you can never change "you" to mean you, unless you become the controller of the spell, such as when creating a copy of a spell with twincast.
