If he casts it in response to you casting Ichor rats it resolves while your rats are still on the stack and you don't have a problem :)

If he plays it in response to the enter the battlefield trigger targetting your rats your rats die but the ability still resolves giving everyone poison.

Countering Icor Rats is the only way the ability does not trigger aside from something like Humility which would supress the ability of any creature entering the battlefield.

Cheers mate! I had sort of a hassle about that yesterday...really weird situation..then again if you would literally look at the situation it becomes clear, yet at those moments the doubt takes over :)
