Etched champion
It says that it is protected by all colours once it gains metalcraft. I wonder if a colourless magic or creature can kill it?

Indeed. Ghostfire, for example, could target it and damage it to death. It can be blocked by colorless creatures (like most artifact creatures) and die to their combat damage. Equipment (so long as it's colorless, which is normal for equipment) can be attached to it, and you could enchant it with Eldrazi Conscription. And so on.
By the way, here is exactly what "protection from [quality]" does (DEBT):
Prevent all Damage that would be dealt to the protected creature by [quality] objects.
The protected creature can't be Enchanted or Equipped by [quality] objects.
The protected creature can't be Blocked by [quality] creatures.
The protected creature can't be the Target of [quality] spells or abilities.
