So lets say, I play elvish pipers, my opponent journey to nowheres it, then i oblivion ring that & canopy cover elvish pipers. if they then destroyed oblivion ring it would in turn destroy journey to nowhere?

no, the journey to nowhere will not be destroyed. it will just stay in battlefield without any targets

eh? no
the oblivion ring exiles the journey, the creature comes back into play.
if the oblivion ring is destroyed/exiled then journey returns to play and a new target creature can be chosen.

yup, but if there are no creatures in play, then it'll stay there without targeting anything right?

if there are no legal targets for journey when it re-enters play, then yes, it's ability will not do anything.
