For Astral Cornucopia, I don't think you can choose colorless (because colorless is literally the absence of color) therefore you wouldn't get any mana from it in traditional EDH rules.

Oh how delightful! A comment! Haven't had one since forever.Well sir, or ma'am, if I remember correctly, you still get the mana, but it turns colorless. Just like if you were to play a red-blue general and stole your opponent's Vine Trellis, you'll be producing colorless mana. But I heard that nowadays the ruling states that you get to produce colors outside your identity.
