Ok, the deck seems a bit unfocused.... I think you should pick a card and run your deck off of that card. Griselbrand is a perfect card to start with. Try getting some creatures that can die and come back to life over and over again, and instead of making it red/black, try black/blue and adding some flicker cards to keep reusing the undying. Killing off and bringing back your own creatures is a very good skill have in a deck.
Absolutely. Thraben Doomsayer is an amazing card for a human deck. I would add as many as you can afford.
Drop the Loyal Cathar and add some Champion of the Parish or Goldnight Commander. Also adding some lingering souls with some white/black lands would help the monk out a lot. More angels, more angelic armaments. Personally I don't find white and blue to go that well together, check out my "Avacyn's Army" deck and please feel free to take some ideas from it.
